This position manages Kitchen and stewarding Operations and Colleagues working in this Department.  Additionally, facilitate training, provide feedback and guidance to team members, approve schedules, investigate and analyse financial results and Guest Feedback Statements, and monitors additional data while leading and motivating direct reports and other team members by praise and/or coaching where applicable.

Main Duties:

  • Promptly greet Guests in a friendly and professional manner
  • Make appropriate service recovery recommendations
  • Manage and place stock requisitions by reviewing stock levels and by forecasting anticipated business volume for the upcoming requisition period
  • Assists with recipe development and training to maintain recipe authenticity
  • Prepare, review and publish schedules in line with the anticipated business volume
  • Ensure all equipment is in working order and report malfunctions and follow up on repairs
  • Conduct performance evaluations, training, guidance, coaching, regular briefings and meetings, and counselling of Colleagues
  • Analyse product mix reports and perform inventory spot checks
  • Monitor manning and the competence level of Colleagues to ensure sufficiency
  • Train all Colleagues in suggestive selling and up-selling techniques to assist in achieving maximized profitability
  • Responsible of stock variance in the department along with direct reports
  • Provide monthly detailed feedback on top line achievements to the Chef De Cuisine to help prepare monthly top line review
  • Attend training and development programs in order to promote personal and career growth
  • Comply with standards at all times in order to drive and improve business excellence through monitoring, analysing performance and taking corrective or preventative action
  • Understand and follow all Standard Operating Procedures in order to exceed the operational requirements and ensure Guests receive the highest standards of quality and service
  • Contribute to the achievement of objectives, action plans and key performance indicators in the Company
  • Enforce and adhere to the local Food Law and regulations to maintain a clean safe and hygienic environment for all Guests and Colleagues
  • Enforce and adhere to all U.A.E. Laws, Health, Safety and Environmental Policies and Company rules and regulations, report safety concerns or incidents to management in order to minimize risk and maintain a clean safe and hygienic environment for all Guests and Colleagues
  • Assist with emergency situations that may arise in order to minimize possible damage, loss or injury to any Guests, Colleagues or Company property
  • Represent and promote the Company in a positive manner at all times in order to maintain a professional brand image to all concerned stakeholders
  • Display a friendly, helpful and cheerful attitude while communicating effectively with Guests and fellow Colleagues
  • Listen actively and respond to Guest feedback as well as review Guest Satisfaction Index results and trends in order to continuously improve and exceed Guest expectations

In order to be qualified for this role you should possess the below criteria:

Essential:

  • High School Diploma
  • A minimum of 2 years’ experience in a Culinary manager level role
  • Demonstrated culinary experience in Emirati and Indian cuisine
  • Ability to communicate in Arabic
  • Proven knowledge of Emirati cuisine and executing recipes
  • Effective oral and written communications skills in English
  • Possess good interpersonal skills for interacting with people
  • A team player and have the ability of meeting assigned targets
  • Multi-tasking, problem solving and judgement skills

Desirable:

  • Tertiary Certificate or Diploma in a Hospitality related field
  • Previous experience in a similar role in Hospitality in the U.A.E.
  • Possess good leadership qualities
  • Proficient user of MS Word, Excel, PowerPoint and Outlook
  • Ability to calculate simple mathematics and collect different modes of payment accurately

Requirements:

  •  Ability to work in a fast pace and dynamic integrated resort environment
  •   Ability to work in an outdoor environment and to stand for long hours
  •   Work on a rotating shifts including weekends and public holidays
  •   Available for overtime work as schedule requires
  •   Physically fit and be able to work flexible hours

In this role you will be you will be reporting to MEP Manager, you are to assist the facility shifts that operate within the facility maintenance department. You will manage the, statutory inspection of all the building and park facility associated equipment visa the application of planned preventative maintenance approach with the aim of maximizing the equipment availability and safety in operation.

The role calls for strong leadership skills and an ability to clearly focus on the planning & preparation of the activities administered by the facility maintenance teams.

Main Duties:

  • To work as operational engineer carrying out water quality testing and the water slide Planned Preventative Maintenance.
  • To lead teams of engineering personal during park operation to provide an effective breakdown service that will facilitate excellent ride availability and safety for our guests and staff.
  • To lead teams of engineering personnel to administer the PPM and safety checks in line with company procedures.
  • To assist the Facility management team to maximizing ride and equipment availability and safety in operation.
  • Keeps both guest and model Citizen Safety the # 1 priority. Accountable for proactively maintaining a safe and enjoyable environment for park guests and employees utilizing resources from local state resources, and Security /Loss Prevention.
  • Responsible for water quality testing and Water Park maintenance.
  • Assists Manager in Scheduling, organizing, directing, and coordinating of all the water quality activities. Schedule work for Water Quality Assistants, depending on work priorities, manpower or equipment availability, or weather conditions.
  • Assists Manager in the scheduling, organizing directing, and coordinating of the water park slide & attractions maintenance.
  • Manages and coordinates activities of workers engaged in repair, maintenance and installation of machines, tools and equipment and in the maintenance of Water Park slides and attractions.
  • Ensures that water quality MCs follow the Merlin, LEGOLADN and departmental policies at all times.
  • Assigns duties to Water Quality Technician, Water Quality Assistant, prepares Duty Roster and monitor their activities, and responsible for the quality of the works.
  • Assists Manager in purchases chemicals, tools, equipment, and supplies required Requisitions and distributes material and equipment for water quality work.
  • Ensures that all health and safety aspects are strictly followed. All the PPEs, MSDS and safety equipment are available and always applied.
  • Assists in inventory supplies of PPEs, tools, equipment, or materials to ensure that sufficient supplies are available, and items are un usable condition.
  • Keeps all tools, machines, and all other equipment in clean, safe and good working condition.
  • Prepare and maintain required records, such as daily checklists, logbooks, and inventory records.
  • Carry out water quality related activities to ensure that instructions are followed, deadlines are met, and schedules are maintained.
  • Keep informed of different management techniques and technical methods by attending supplemental courses, seminars, conventions, etc.
  • Keep abreast of government and state regulations. Monitors water quality regulatory compliance for LEGOLAND Dubai activities and operations .
  • Assists in monitoring of chemicals application in terms of methods, procedures, dosages, and healthy & safety.
  • Responsible for the cleanliness of all the tools ad water features.
  • Responsible for the preparation and calibration of water quality chemicals, water quality parameter testing apparatus and chemical dosing system as per manufacturer recommendation.
  • Ensures that all plants rooms, pump rooms, pools and working places are in a hygienic, clean, and safe condition always.
  • Responsible for operation and routine maintenance of pumps, filtration, water features system, all power tools, motorized equipment, and machinery. Notifies management of needed repairs.
  • Operates, calibrates, maintains, and properly documents the use of water sampling equipment, monitoring testers; maintains maintenance and calibration records for equipment and test instrumentation.
  • Assists Manager to liaise with water quality contractors, vendors, and service provider ; and monitor their performance and scope of works.
  • Creates and maintains teamwork within department and all the other departments.
  • Assists other departments on the general maintenance works such as ride maintenance, mechanical, electrical, facilities, LEGO models if needed.
  • perform other duties as assigned.

Health & Safety

Managers/Supervisors are responsible for all aspects of Health, Safety & Security within their department, in line with the Group Policy (HS001). In particular, they must ensure that risk assessments have been carried out, that safe working procedure are in place for all work activities and that all employees under their management are aware of the Group Health, Safety and Security Policy and their obligations under it. They must ensure that safe working practices are monitored, and that risk assessments and procedures are reviewed regularly. Where incidents do occur, they must ensure that they are investigated appropriately and that where necessary, corrective action is taken to ensure that such incidents are no repeated.

Are You a Star?

In order to be qualified for this role you should possess the below criteria:

  • Degree or Diploma in Electrical/Mechanical Engineering
  • Requires a minimum of three years maintenance experience, with a minimum of one year supervisory experience
  • Three years of facility maintenance experience in the theme park or Water Park environment
  • Extensive knowledge of Heat exchangers, Water filtration systems in Water Park, Plumbing and water chemistry
  • Ability to read blueprints pertaining to rides, attractions, electrical, mechanical and plumbing
  • Extensive knowledge in computerized maintenance management systems

Job-Specific Skills:

  • Ideally a working knowledge of EN13814scheme/ EIAC and all other third parties
